Start at the Lonja, before you even go inside, and just look at the stone. Then walk in and look up, and you understand why silk merchants once thought this building could sell anything. That contrast, somewhere between working stone and open sky, is Valencia's old town in miniature. You keep turning a corner expecting a plaza and finding a market, or a church folded so tightly into the street grid that you nearly walk past it.

The old city rewards slow walking more than most. The Plaza de la Virgen sits at its centre with the cathedral on one side, and the murmuring going on around the Tribunal de las Aguas most weeks is one of the oldest continuous rituals you can just stand and watch, no ticket needed. Climb the Miguelete tower if your knees allow it, the view over the terracotta roofs toward the towers of Serranos and Quart is the kind of thing that makes the climb make sense in retrospect.

Food here is not an afterthought to sightseeing, it runs underneath it. A proper paella, the rice kind, not the mixed seafood version tourists get sold, is a lunchtime thing, cooked slow and eaten later than you'd expect. Horchata with fartons is a local habit worth adopting for an afternoon. Wander into the Mercado Central and you'll see the produce that ends up on those plates, laid out under ironwork that lets the light in.
